CSA Summer Share 2014 Week 6

Roasted kohlrabi with garlic and Parmesan recipe

Prep Time: 10 minutesCook Time: 20 minutesTotal Time: 30 minutesYield: 4 servings

  • 4 kohlrabi bulbs, peeled and cut into chunks, about 1 inch thick
  • 1 tablespoon of good olive oil
  • 1 clove garlic, minced
  • 1/3 cup grated Parmesan cheese
  • Salt and fresh pepper to taste

Method:Preheat oven to 400 degrees Fahrenheit

Toss the kohlrabi in olive oil with garlic, salt and pepper.

 Arrange in a single layer on a baking sheet.

 Bake in the oven about 15-20 minutes, turning a few times so they brown evenly.

 When they are cooked, remove from the oven and toss with Parmesan cheese.

Place them in the oven again for a few minutes to brown the cheese then serve right away.
